Zucchini Nut Bread


3 Cups Flour
1 TBSP Cinnamon, ground
1/4 tsp Nutmeg, ground
1 tsp Salt
1 tsp Baking Powder
1/4 tsp Baking Soda
3 Eggs
2 Cups Sugar
1 Cup Vegetable Oil
1 Cup Zucchini, shredded
1 TBSP Vanilla Extract
1/4 Cup Pecans, chopped
1/4 Cup Walnuts, chopped


Grease and flour a 9x5x3 loaf pan; set aside. In medium bowl combine flour, cinnamon, nutmeg, salt, baking powder, and baking soda; set aside. In a large bowl combine eggs, sugar, oil, zucchini and vanilla.
Add dry ingredients. Stir just till moistened. Stir in pecans and walnuts. Spread batter in prepared pan.
Bake 1 hour and 5 minutes to 1 hour and 15 minutes @ 325*F.
